Tekaisinpa tuossa iltapalaksi taas siemennäkkäriä. Tällä kertaa laitoin taikinaan myös rusinoita ja pilkoin pari kourallista hasselpähkinöitä. Aika herkkua tuli.
Taaskaan en tajunnut ottaa kuvia valmistusvaiheesta mutta seuraavalla kerralla otan kyllä! Resepti on joka kerta hieman eri. Heittelen taikinaan lähinnä sitä mitä kaapista löytyy. Useimmiten laitan joukkoon sekä kurpitsan- että seesaminsiemeniä. Laitan tuon ns. perusohjeeni myöhemmin. Tämä oli ensimmäinen kerta, kun laitoin mukaan myös pähkinää. Näkkäristä tuli kivan makea ja syötiin sitä hyvällä ruokahalulla. Päälle luomuvoita ja sinistä emmentaalia, joka kivasti tasapainotti näkkärin makeutta.
Näkkäriin laitoin n. 12 rkl mantelijauhoa, edit: kukkurallista (suosin luomua, ja jos haluat, voit toki jauhaa mantelit myös itse jauhoksi), n 4 rkl kookosjauhoa (luomua), pari kourallista murskattuja hasselpähkinöitä (luomu), ei aavistustakaan määrästä, ehkä noin 3 rkl rusinoita (luomu), 5 kananmunaa (luomu), pari hyppysellistä puhdistamatonta merisuolaa ja loraus oliiviöljyä (luomu).
Mitat ovat noin mittoja, koska leivon ja teen ruokaakin samanlaisella tyylillä, heittelen taikinan joukkoon mitä nyt haluan sinne tulevan ja mitä kaapista löytyy ja lisäilen joko jauhoja, siemeniä tai kanamunia, riippuen siis ihan täysin taikinan koostumuksesta ja siitä, minkälaista näkkäriä tänään haluan.
EDIT: Kookosjauhojen ja pähkinöiden käyttö on ihan valinnaista, eli voit hyvin jättää ne kokonaan pois, silloin tarvitset munia vain muutaman, rohkeasti vaan kokeilemaan. Toki voit korvata pähkinät ja kookosjauhot, lisäämällä reilusti mantelijauhoja.

Itse tykkään käyttää luomutuotteita silloin kun se on mahdollista mutta voit käyttää ihan minkälaisia tuotteita itse haluat.
Esilämmitä uuni 200 asteeseen ja vuoraa leivinpaperilla leivinpelti.
Kuivat aineet kulhoon ja kunnollinen sekoitus. Sitten loraus oliiviöljyä. Laitan kananmunat joukkoon yksitellen ja sekoitan, jotta näin minkälainen taikinan koostumus on. Taikinan tulisi olla löysähköä, joten jos taikina tuntuu jämäkältä eikä pyöri kulhossa sillain kivasti, niin lisään kananmunan :) ja sekoitan. Jos taikina on veläkin liian jäykkää, lisään kananmunan.
Sellainen huomio, jos et ole aikaisemmin käyttänyt kookosjauhoja. Ne imevät reilusti nestettä ja antavat makeahkoa makua taikinaan. Kookosjauhoja voi yleisesti ottaen käyttää noin 1/3 kaikkien käytettävien jauhojen kokonaismäärästä. Mitä kauemmin annat taikinan olla kulhossa, sitä jähmeämmäksi se muuttuu. Ole siis suht ripeä taikinan sekoittamisen jälkeen.
Kaada taikina keskelle vuorattua leivinpeltiä ja levitä taikina tasaiseksi levyksi. Itse levitän samalla ruokalusikalla, jolla olen sekoittanut ainekset taikinaksi. Kovin ohut taikinalevy palaa helposti ja liian paksu taas ei paistu rapeaksi. Näkkäriä paistetaan 200 asteessa alimmalla tasolla n. 10 minuuttia ja nostetaan sen jälkeen keskitasolle paistumaan. Kokonaispaistoaika on noin 20-30min ja riippuu niin uunin paisto-ominaisuuksista kuin myös siitä, miten tummaksi paistunutta haluat näkkärin olevan.
Kun otat näkkärin pois uunista, leikkaa näkkärilevy nopeasti sopivan kokoisiksi paloiksi. Mikäli näkkäri ehtii jäähtyä, ei leikkaaminen veitsellä enää onnistu vaan näkkäri hajoaa palasiksi. Tällöin voit paloitella näkkärin ihan murtamalla käsin mutta odota kuitenkin vielä hetki, jottei sormesi vaan pala!

I baked some seed&hazelnut crisp bread for a evening snack. This time I tossed there couple handfulls of crushed hazelnuts and some raisins too, first time ever. It works! So delicious sweet but not too much. We covered the crisp bread's pieces with some organic butter and Emmentaler . YEY! Marvellous!
You have probably already guessed that I didn't took any photos of the making of the crisp bread. :) Well, I might say for my defence that idea to do a post from this to my blog popped to my head after we had ate first round of it. :) But next time, I will. I promise. (And everybody buys that, right?)
Every time the batter is slighty different than previous one, because of my cupboards findings and my desires, usually I use some sesame and pumpkin seeds. I think this was the first time I didn't use them. I will post the basic crisp bread recipe when I do these next time.
Usually I just toss the ingredients which I have in my cupboards to the batter and if the batters texture aren't just right I add whatever the batter or just me, needs. So the recipe is written down like some sort of ish of the amounts of the ingredients 'cause I really don't measure them. I bake pretty much sameway as I cook. So I encourage you to try it and then with the result you have, you'll know better if you like to have moore seeds into it. When you try it for a second time you'll know better if there wasn't enough raisins or there were too much of the coconut flour or maybe it was just perfect. Just go for it and give it a try.
Edit: Using coconut flours and (hazel)nuts is optional. You could leave them out and just add more almond flours and probably you won't need ao many eggs.

Recipe:
Ingredients:
about 12 Tbs heaped, almond flour (I used organic flours but if you want, you could mill almonds to the flour on your own), about 4 Tbs cocnut flour (organic), couple handsfuls of crushed hazelnuts, 5 (could be less or moore than 5) preferably organic or free ranged eggs, I have no clue how much I toss raisins in there but I think about 3 Tbs, seasalt (good quality nonrefined, perefably) pinch or two, dollop of olive oil (organic)
I like to use organic food and ingredients when it's possible but you can use what kind of groceries you'll like.
Note: If you aren't familiar to using cocnut flours, they absorbed liquid pretty much and it'll give tiny bit sweetness to the batter. The longer the batter sits on a bowl, the batter will get tougher and tougher. So be quick when batter is ready.
Preheat oven to 200 celcius or 392 fahrenheit.
Cover the baking tray with a baking sheet/grease proof paper.
Mix well all the dry ingredients together with a tablespoon. Pour dollop of olive oil and one egg to the bowl and mix them together. Add one egg at the time and add so many eggs as you'll think the batter is nicely soft. If the batter is hard to handle and it's thick, add again one egg and mix. The batter should be soft and if you could handle it easily with the spoon, it should be okay.
Pour the batter center of baking tray and spread the batter with the back of the spoon. Try to flatten the batter evenly to the baking tray. Dough should spread easily but if it seems to be difficult you could sprinkle little bit olive oil to it and then the spoon get it's works done nicely.
The total baking time is between 20-30minutes. The baking time depends on how dark you'll want the crisp bread to be.
Put the baking tray at the lowest point of the baking rack and let it bake between 5-10 minutes then relocated the baking tray to the middle. I bake these crisp breads usually 25-30minutes.
When the crisp bread is ready, cut it to pieces with a knife. If you wait too long, the bread will crack when it's cooled down. Don't worry, if you waited too long and it's cracking small pieces when you'll try to cut it. Just break it with your hands but wait a little bit longer so you don't burn your fingers!
